Banana Bread Muffins

Adapted from Taste of Home Ingredients:
Makes 16 muffins
1 ¾ cups All-Purpose Flour
¾ cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
½ cup canola oil
½ cup plain yogurt
1 teaspoon vanilla extract
1 cup mashed ripe bananas (2 to 3 medium)
¾ cup semisweet chocolate chips
Preparation:
- Preheat oven to 350°F.
- Coat a large muffin tin with non-stick spray.
- In a medium bowl, combine the flour, sugar, baking powder, baking soda and salt.
- In a large bowl, combine the egg, oil, banana, yogurt and vanilla.
- Slowly add the dry ingredients to the banana batter. Stop beating as soon as the batter is moist.
- Fold in chocolate chips.
- Pour batter into prepared muffin tins, filling about 2/3 full.
- Spread into the loaf pan and bake for about 25 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before turning onto a wire rack.
